An die Brotbäckerinnen
Kannst du Oberhitze einstellen? Wenn ja, wuerde ich das mal ausprobieren. Ich stelle zudem noch eine grosse Tasse Wasser in den Ofen.
Whole Wheat Bread
sufficient for 2 loaf pans
Ingredients
6 cups whole wheat flour (e.g. nutty wheat or krakley wheat or stone ground whole meal flour)
1 cup white bread flour
1 cup oats
1 sachet dry yeast
2 tsp salt
1 litre lukewarm water
1 Tbsp sunflower or canola oil
1 Tbsp blackstrap molasses
2 Tbsp honey OR 2 Tbsp golden syrup OR 2 Tbsp brown sugar
Method
Mix all dry ingredients in a large bowl.
Dissolve the molasses, honey/syrup/sugar in the lukewarm water and add the oil. Pour into flour mix and stir (with a large wooden spoon) until well combined.
Spoon into loaf pans and leave to rise for about an hour.
Put a mug filled with water in the bottom of the oven and preheat the oven to 180ºC.
Bake the bread for an hour. Turn out onto a rack to cool.
Variations
Seed loaf
Add 1 - 2 cups of mixed seeds (sunflower seeds, pumpkin seeds, linseed, sesame seeds) to the dry ingredients. Sprinkle breads with some seeds.
Nut and Raisin Health loaf
Replace the blackstrap molasses with 2 Tbsp High Test Molasses (this is sweeter). Add 1 cup of raisins / sultanas and 1 cup of chopped nuts (walnuts, pecan nuts) to the dry ingredients.
NOTE: You can buy both blackstrap and high test molasses in the health food section of your supermarket, or at a health shop.
